Winemaker Notes
Our 2008 Refugio Cabernet Sauvignon was assembled using fruit from six
different vineyards in the Temecula Valley area, the most prominent being
the Refugio de Los Caballos plantings in La Cresta. Blended from the five
“big” Bordeaux grape varieties, each adds its own character to the mix. 2008
was a very good vintage for us, with drought conditions adding intensity to
the fruit, but not so severe as 2007 which showed slightly more dried fruit
character. Moderate winemaking extraction techniques (12 days skin
contact, hand punch-downs, small bin fermentation) were employed to keep
the wine approachable, resulting in a nicely balanced depth of flavor, silky
smooth tannins, and a lingering complex finish.
