2008 Solace
Rich & buttery with floral/pear/honey top notes, this wine pairs poetically with dishes such as snapper in garlic herb sauce; grilled salmon cooked in olive oil with garlic, lemon, & capers; and roasted artichoke or butternut squash soups.
Winemaker Notes
Our quest for a big, buttery, dry white culminated in this substantial Rhone style blend. Mostly tank aged for floral aromas & fruitiness, 20% was put on French oak which adds a caramel/vanilla note. The viognier portion (44%) of the blend was cold fermented & malolactic suppressed. The Roussanne (15%) & Chardonnay (41%) portions were allowed full malolactic and aged sur lies 5 months for buttery richness prior to blending.
