Viognier tends to get heavy on the palate with thick viscosity and low acid if picked too ripe, so we walk the vineyards and take fruit samples regularly to ensure we harvest at the perfect ripeness to allow a touch of wieght on the mid palate, yet with enough crisp acid to keep the wine in balance. A touch of Muscat was blended to amplify the floral notes, and malolactic fermentation was inhibited to further our goal of making a leaner, more refreshing Viognier that is a perfect accompaniment to our hot summer days.
